I organize all my iPhone apps by color.
They are in folders on my home screen & follow ROYGBIV color order, with some variations for the various shades of blue, plus black, white, & gray.
It’s an extremely unscientific method of organizing, one which kept me occupied on a cross-country flight many years ago when the in-flight entertainment was unavailable.
My husband thinks this is insane and does not understand how I find the apps I need, to which I say 1: I just know the color? and 2: I use the search feature most of the time!
As far as ~aesthetic~ home screens go, I think this is pretty mild considering all the crazy widgets and icons you can add these days.
And in spite of my rainbow organizing, I am still a bit of a purist: my first iPhone was shipped to me with a default layout of 3 rows of 4 apps, plus a 4th row of 2 apps & 2 blank spaces, plus 4 apps in the dock. To this day, I still maintain that formula with 3 rows of 4 folders, a row of 4 apps, and a row of 2 apps. It feels balanced!
This organization strategy does not apply to my iPad, where those apps are sorted into category-appropriate folders like Media, Organization, Utilities, Games, etc.
The one thing all my devices do have in common, though, is that I’m a Home Screen Only™ girly — I refuse to have multiple pages of apps to swipe through.
I’ve only seen one or two other people organize their apps the same way I do (I recently learned that does it too!) but I can’t be the only one with a very particular system, so please share yours!

Color coding is everything. Aesthetically pleasing, but to me it's way easier to find the apps I need after only a week or less of using this system. Whenever I use my husband's phone I literally feel like I'm going insane. My eyes get so overwhelmed!
