#28 | my favorite chocolate chip cookies
Were these cookies the reason I decided to finally get married?
Out of the blue one day, a few years ago, my then-boyfriend1 decided to find a recipe for chocolate chip cookies and proceeded to make them (??) by himself (??) without any prompting.
As a certified Control Freak, I was skeptical about whatever random recipe he had found online without consulting me and as a Very Impatient Person, I was annoyed that the dough had to chill for so long!!
I probably complained about it for the entire time it took to make, chill, and bake these cookies, right up until the time I bit into one and declared that they were worth it.
There are a million chocolate chip cookie recipes out there and I don’t claim that this particular one is the world’s greatest, but it’s by far the best one we’ve ever made.
Here’s what sets this particular cookie apart for me:
They are always chewy, both fresh from the oven and the next day
Using chunks instead of chips means more chocolate, and the combo of semisweet and dark chocolate is great (Trader Joe’s sells semisweet chunks!)
I add flaky sea salt at the end to really take them up a notch
They are not hard to make; they take time but do not take skill
The recipe recommends using an ice cream scoop to get even-sized cookies but I’m a monster with a kitchen scale so I weigh the dough into 12 equal portions. You can definitely be less neurotic!
Around the same time we discovered this recipe, I also decided I was interested in getting married after all so he is now my husband. Coincidence? Fate? The magic of chocolate chip cookies? I’ll let you be the judge.
